Preheat oven to 350° F. Cook macaroni
in boiling water until tender and drain well. Meanwhile, melt butter
in a medium-sized sauce pan, add flour, stirring to combine. Slowly
add WestSoy and cook, stirring until mixture thickens and begins to
boil. Remove from heat and stir in shredded cheese or alternative, pimentos
mustard, and salt and pepper to taste. Add drained macaroni, mixing
well. Turn into a lightly greased 2-quart baking dish. Sprinkle with
paprika, and bake 30 to 40 minutes until bubbly around edges and golden
brown on top.
